Christmas Cake (1927 recipe)


10oz butter
11oz sugar
12 oz Flour
Pinch of salt
1 teaspoonful spice
10oz Seeded Raisins
6oz Currants
40z Almonds
4oz Cherries
4oz Peel
6-8 eggs
1 wineglass brandy (if liked)


Mix fruits together, chopping Seeded raisins and blanched almonds and
cutting up peel and cherries.
Sieve flour, salt and spice.
Cream butter and sugar well, beat in eggs well (one at a time).
If the mixture shows signs of curdling add a little flour.

Stir in flour lightly and lastly prepared fruit.
Add brandy and mix thouroughly.
Pour into a lined cake tin and bake in a cook oven for 4-6 hours, reducing
the temperature when the cake begins to brown
